- Chicken hearts - 250 grams
- White rice - 150 grams
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Red bell pepper - 1 small, diced
- Tomato - 1 medium, diced
- Chicken broth - 400 ml
- Olive oil - 2 tablespoons
- Fresh parsley - 2 tablespoons, chopped
- Bay leaf - 1
- Salt - to taste
- Black pepper - to taste
Steps
- Rinse the white rice under cold water until the water runs clear, then drain and set aside.
- In a medium pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sauté until they are translucent.
- Add the diced red bell pepper and tomato to the pot, cooking for another 3-4 minutes until softened.
- Stir in the chicken hearts, cooking until they are browned on all sides, about 5-7 minutes.
- Add the rinsed rice to the pot, mixing well with the other ingredients. Cook for another 2 minutes.
- Pour in the chicken broth, add the bay leaf, and season with salt and black pepper to taste. Bring to a boil.
- Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 20 minutes, or until the rice is cooked and the liquid is absorbed.
- Remove from heat, discard the bay leaf, and fluff the rice with a fork. Stir in the chopped parsley before serving.
