Ingredients

  • Chicken hearts - 250 grams
  • White rice - 150 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Red bell pepper - 1 small, diced
  • Tomato - 1 medium, diced
  • Chicken broth - 400 ml
  • Olive oil - 2 tablespoons
  • Fresh parsley - 2 tablespoons, chopped
  • Bay leaf - 1
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the white rice under cold water until the water runs clear, then drain and set aside.
  2. In a medium pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sauté until they are translucent.
  3. Add the diced red bell pepper and tomato to the pot, cooking for another 3-4 minutes until softened.
  4. Stir in the chicken hearts, cooking until they are browned on all sides, about 5-7 minutes.
  5. Add the rinsed rice to the pot, mixing well with the other ingredients. Cook for another 2 minutes.
  6. Pour in the chicken broth, add the bay leaf, and season with salt and black pepper to taste. Bring to a boil.
  7. Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 20 minutes, or until the rice is cooked and the liquid is absorbed.
  8. Remove from heat, discard the bay leaf, and fluff the rice with a fork. Stir in the chopped parsley before serving.
