  • Bell pepper - 1 small, diced
  • Tomato - 1 medium, diced
  • Cilantro - 2 tablespoons, chopped
  • Lime juice - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cumin - 1/2 teaspoon
  • Paprika - 1/2 teaspoon

Steps

  1. Rinse and cut the cauliflower into florets, then pulse in a food processor until it resembles rice.
  2. In a large skillet, heat olive oil over medium heat and sauté the diced onion and garlic until translucent, about 3-4 minutes.
  3. Add the diced bell pepper and tomato to the skillet, cooking for another 3-4 minutes until softened.
  4. Stir in the cauliflower rice, cumin, paprika, salt, and black pepper, mixing well to combine.
  5. Cover the skillet and cook for 10-12 minutes, stirring occasionally until the cauliflower is tender.
  6. Remove from heat, stir in lime juice and chopped cilantro, and serve warm.
