Steps
- Rinse and cut the cauliflower into florets, then pulse in a food processor until it resembles rice.
- In a large skillet, heat olive oil over medium heat and sauté the diced onion and garlic until translucent, about 3-4 minutes.
- Add the diced bell pepper and tomato to the skillet, cooking for another 3-4 minutes until softened.
