Steps
- Begin by preparing the cauliflower rice. Remove the leaves and stem from the cauliflower and cut it into florets. In a food processor, pulse the florets until they resemble rice grains. Set aside.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion becomes translucent, about 3-4 minutes.
- Add the mixed mushrooms to the skillet and cook for about 5-7 minutes, until they are tender and browned.
- Stir in the cauliflower rice and pour in the vegetable broth. Season with salt and black pepper to taste.
