- Garlic - 2 cloves, minced
- Onion - 1 small, chopped
- Olive oil - 2 tablespoons
- Lime juice - 1 tablespoon
- Salt - 1 teaspoon
- Black pepper - to taste
- Fresh cilantro - for garnish
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then drain.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until translucent.
- Add the diced red bell pepper, zucchini, and carrot to the pan. Cook for about 5 minutes, stirring occasionally until the vegetables are slightly softened.
- Stir in the rinsed rice and cook for another 2 minutes to toast the rice slightly.
- Pour in the coconut milk and vegetable broth. Add salt and black pepper. Bring to a boil, then reduce the heat to low.
- Cover the saucepan and let it simmer for 15 minutes, or until the rice is cooked and the liquid is absorbed.
- Stir in the green peas and lime juice, cooking for an additional 2 minutes.
- Remove from heat and let it sit, covered, for 5 minutes. Fluff the rice with a fork.
