  • Green peas - 100 grams, fresh or frozen
  • Garlic - 2 cloves, minced
  • Onion - 1 small, chopped
  • Olive oil - 2 tablespoons
  • Lime juice - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - to taste
  • Fresh cilantro - for garnish

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then drain.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until translucent.
  3. Add the diced red bell pepper, zucchini, and carrot to the pan. Cook for about 5 minutes, stirring occasionally until the vegetables are slightly softened.
  4. Stir in the rinsed rice and cook for another 2 minutes to toast the rice slightly.
