- Jasmine rice - 1 cup (200g)
- Coconut milk - 400 ml
- Water - 200 ml
- Garlic - 2 cloves, minced
- Onion - 1 medium, finely chopped
- Cumin powder - 1 tsp
- Turmeric powder - 1/2 tsp
- Salt - 1 tsp
- Black pepper - 1/2 tsp
- Fresh cilantro - 2 tbsp, chopped
- Lime - 1, juiced
- Olive oil - 1 tbsp
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then drain.
- In a medium pot, heat the olive oil over medium heat and sauté the chopped onion and minced garlic until translucent, about 3-5 minutes.
- Add the rinsed rice to the pot and stir to coat the grains with the oil and aromatics.
- Pour in the coconut milk and water, then add cumin, turmeric, salt, and black pepper. Stir well to combine.
- Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes or until the rice is cooked and the liquid is absorbed.
- Remove from heat and let it sit, covered, for another 5 minutes.
- Fluff the rice with a fork and stir in the chopped cilantro and lime juice before serving.
