Ingredients

  • Jasmine rice - 1 cup (200g)
  • Coconut milk - 400 ml
  • Water - 200 ml
  • Garlic - 2 cloves, minced
  • Onion - 1 medium, finely chopped
  • Cumin powder - 1 tsp
  • Turmeric powder - 1/2 tsp
  • Salt - 1 tsp
  • Black pepper - 1/2 tsp
  • Fresh cilantro - 2 tbsp, chopped
  • Lime - 1, juiced
  • Olive oil - 1 tbsp

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then drain.
  2. In a medium pot, heat the olive oil over medium heat and sauté the chopped onion and minced garlic until translucent, about 3-5 minutes.
  3. Add the rinsed rice to the pot and stir to coat the grains with the oil and aromatics.
  4. Pour in the coconut milk and water, then add cumin, turmeric, salt, and black pepper. Stir well to combine.
  5. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes or until the rice is cooked and the liquid is absorbed.
  6. Remove from heat and let it sit, covered, for another 5 minutes.
  7. Fluff the rice with a fork and stir in the chopped cilantro and lime juice before serving.
