Ingredients

  • Chayote - 400 grams

  • Olive oil - 2 tablespoons
  • Vegetable broth - 500 milliliters
  • Parmesan cheese - 30 grams, grated
  • Parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Peel and dice the chayote into small cubes.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and sauté for an additional minute until fragrant.
  4. Stir in the diced chayote and sauté for about 3 minutes.
  5. Pour in the vegetable broth, and season with salt and black pepper. Bring to a boil.
  6. Reduce the heat and let it simmer for 15-20 minutes, or until the chayote is tender.
  7. Once cooked, remove from heat and stir in the grated Parmesan cheese and chopped parsley.
