- Fresh parsley - 2 tablespoons, chopped

- Black pepper - to taste
Steps
- In a medium saucepan, heat the olive oil over medium heat.
- Add the chopped onion and garlic, and sauté until the onion becomes translucent, about 3-4 minutes.
- Stir in the grated carrots and cook for an additional 2-3 minutes, until they soften slightly.
- Add the rice to the saucepan, stirring to coat the grains with the oil and vegetables.
- Pour in the vegetable broth, and season with salt and black pepper to taste.
- Bring the mixture to a boil, then reduce the heat to low and cover the saucepan.
- Simmer for about 20 minutes, or until the rice is tender and has absorbed the liquid.
- Remove from heat, fluff the rice with a fork, and stir in the chopped parsley before serving.
