  • Vegetable broth - 400 ml
  • Olive oil - 2 tablespoons
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a medium saucepan, heat the olive oil over medium heat.
  2. Add the chopped onion and garlic, and sauté until the onion becomes translucent, about 3-4 minutes.
  3. Stir in the grated carrots and cook for an additional 2-3 minutes, until they soften slightly.
  4. Add the rice to the saucepan, stirring to coat the grains with the oil and vegetables.
  5. Pour in the vegetable broth, and season with salt and black pepper to taste.
  6. Bring the mixture to a boil, then reduce the heat to low and cover the saucepan.
  7. Simmer for about 20 minutes, or until the rice is tender and has absorbed the liquid.
  8. Remove from heat, fluff the rice with a fork, and stir in the chopped parsley before serving.
