Ingredients
- White rice - 1 cup (200g)
- Onion - 2 medium (200g)
- Garlic - 3 cloves
- Olive oil - 2 tablespoons (30ml)
- Vegetable broth - 2 cups (480ml)
- Bay leaf - 1
- Salt - 1 teaspoon (5g)
- Black pepper - 1/2 teaspoon (2g)
- Fresh parsley - 2 tablespoons, chopped (optional)
- Lemon juice - 1 tablespoon (15ml, optional)
Steps
- Thinly slice the onions and mince the garlic.
- In a medium saucepan, heat the olive oil over medium heat. Add the sliced onions and cook, stirring occasionally, for about 10-12 minutes until they are caramelized and golden brown.
- Add the minced garlic to the caramelized onions and cook for an additional 1-2 minutes until fragrant.
- Stir in the rice and cook for another 2 minutes, allowing the rice to toast slightly.
- Add the vegetable broth, bay leaf, salt, and black pepper to the saucepan. Bring to a boil.
- Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for about 18-20 minutes or until the rice is cooked and the liquid is absorbed.
- Remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork.
- If desired, stir in chopped fresh parsley and lemon juice before serving.
