Ingredients

  • rice - 150 grams
  • carne seca (sun-dried beef) - 100 grams
  • onion - 1 medium, finely chopped
  • garlic - 2 cloves, minced
  • bell pepper - 1/2, chopped
  • tomato - 1 medium, chopped
  • olive oil - 2 tablespoons
  • cumin - 1 teaspoon
  • black pepper - 1/2 teaspoon
  • bay leaf - 1
  • vegetable broth - 400 ml
  • parsley - 2 tablespoons, chopped
  • salt - to taste

Steps

  1. Soak the carne seca in water overnight to rehydrate, then drain and shred it.
  2. In a large pot, heat the olive oil over medium heat and sauté the onion and garlic until translucent.
  3. Add the bell pepper and tomato, cooking until softened.
  4. Stir in the shredded carne seca, cumin, black pepper, and bay leaf, cooking for an additional 5 minutes.
  5. Add the rice, stirring well to combine, then pour in the vegetable broth and bring to a boil.
  6. Reduce the heat to low, cover the pot, and simmer for about 15-20 minutes or until the rice is cooked and liquid is absorbed.
  7. Remove from heat, discard the bay leaf, and fluff the rice with a fork. Stir in the chopped parsley and season with salt to taste.
  8. Serve warm, garnished with additional parsley if desired.
