- rice - 150 grams
- carne seca (sun-dried beef) - 100 grams
- onion - 1 medium, finely chopped
- garlic - 2 cloves, minced
- bell pepper - 1/2, chopped
- tomato - 1 medium, chopped
- olive oil - 2 tablespoons
- cumin - 1 teaspoon
- black pepper - 1/2 teaspoon
- bay leaf - 1
- vegetable broth - 400 ml
- parsley - 2 tablespoons, chopped
- salt - to taste
Steps
- Soak the carne seca in water overnight to rehydrate, then drain and shred it.
- In a large pot, heat the olive oil over medium heat and sauté the onion and garlic until translucent.
- Add the bell pepper and tomato, cooking until softened.
- Stir in the shredded carne seca, cumin, black pepper, and bay leaf, cooking for an additional 5 minutes.
- Add the rice, stirring well to combine, then pour in the vegetable broth and bring to a boil.
- Reduce the heat to low, cover the pot, and simmer for about 15-20 minutes or until the rice is cooked and liquid is absorbed.
- Remove from heat, discard the bay leaf, and fluff the rice with a fork. Stir in the chopped parsley and season with salt to taste.
- Serve warm, garnished with additional parsley if desired.
