Ingredients

  • Basmati rice - 150 grams
  • Beef (chuck or sirloin) - 300 grams, cubed
  • Onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Red bell pepper - 1, diced
  • Carrot - 1 medium, diced
  • Green peas - 100 grams, frozen or fresh
  • Olive oil - 2 tablespoons
  • Beef broth - 500 milliliters
  • Tomato paste - 2 tablespoons
  • Paprika - 1 teaspoon
  • Cumin - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Heat olive oil in a large skillet over medium heat. Add the diced onion and minced garlic, cooking until translucent.
  2. Add the cubed beef to the skillet, seasoning with salt and black pepper. Brown the beef on all sides for about 5-7 minutes.
  3. Stir in the diced red bell pepper and carrot, cooking for another 3-4 minutes until they begin to soften.
  4. Add the tomato paste, paprika, and cumin, mixing well to coat the beef and vegetables. Cook for an additional 2 minutes.
  5. Pour in the beef broth and bring the mixture to a boil. Once boiling, add the basmati rice and stir to combine.
  6. Reduce the heat to low, cover the skillet, and simmer for 20 minutes or until the rice is cooked and has absorbed the broth.
  7. In the last 5 minutes of cooking, add the green peas and stir gently to combine. Allow to finish cooking with the lid on.
  8. Remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork and garnish with fresh parsley before serving.
