- Basmati rice - 150 grams
- Beef (chuck or sirloin) - 300 grams, cubed
- Onion - 1 medium, diced
- Garlic - 2 cloves, minced
- Red bell pepper - 1, diced
- Carrot - 1 medium, diced
- Green peas - 100 grams, frozen or fresh
- Olive oil - 2 tablespoons
- Beef broth - 500 milliliters
- Tomato paste - 2 tablespoons
- Paprika - 1 teaspoon
- Cumin - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Heat olive oil in a large skillet over medium heat. Add the diced onion and minced garlic, cooking until translucent.
- Add the cubed beef to the skillet, seasoning with salt and black pepper. Brown the beef on all sides for about 5-7 minutes.
- Stir in the diced red bell pepper and carrot, cooking for another 3-4 minutes until they begin to soften.
- Add the tomato paste, paprika, and cumin, mixing well to coat the beef and vegetables. Cook for an additional 2 minutes.
- Pour in the beef broth and bring the mixture to a boil. Once boiling, add the basmati rice and stir to combine.
- Reduce the heat to low, cover the skillet, and simmer for 20 minutes or until the rice is cooked and has absorbed the broth.
- In the last 5 minutes of cooking, add the green peas and stir gently to combine. Allow to finish cooking with the lid on.
- Remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork and garnish with fresh parsley before serving.
