Ingredients

  • Jasmine rice - 150 grams
  • Shrimp (peeled and deveined) - 200 grams
  • Olive oil - 2 tablespoons
  • Garlic (minced) - 2 cloves
  • Onion (chopped) - 1 small
  • Bell pepper (chopped) - 1/2 medium
  • Tomato (chopped) - 1 medium
  • Cilantro (chopped) - 2 tablespoons
  • Lime juice - 1 tablespoon
  • Vegetable broth - 400 milliliters
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then set aside.
  2. In a medium saucepan, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent.
  3. Add the chopped bell pepper and tomato to the pan, cooking for another 3-4 minutes until softened.
  4. Stir in the rinsed jasmine rice and paprika, mixing well to coat the rice with the vegetables.
  5. Pour in the vegetable broth and bring to a boil. Reduce heat to low, cover, and simmer for about 15 minutes or until the rice is cooked and the liquid is absorbed.
  6. While the rice cooks, heat the remaining tablespoon of olive oil in a separate skillet over medium heat. Add the shrimp, seasoning with salt and black pepper, and cook for about 3-4 minutes until pink and opaque.
  7. Once the rice is done, fluff it with a fork and gently fold in the cooked shrimp and chopped cilantro. Drizzle with lime juice before serving.
  8. Serve warm, garnished with additional cilantro if desired.
