- Jasmine rice - 150 grams
- Shrimp (peeled and deveined) - 200 grams
- Olive oil - 2 tablespoons
- Garlic (minced) - 2 cloves
- Onion (chopped) - 1 small
- Bell pepper (chopped) - 1/2 medium
- Tomato (chopped) - 1 medium
- Cilantro (chopped) - 2 tablespoons
- Lime juice - 1 tablespoon
- Vegetable broth - 400 milliliters
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then set aside.
- In a medium saucepan, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent.
- Add the chopped bell pepper and tomato to the pan, cooking for another 3-4 minutes until softened.
- Stir in the rinsed jasmine rice and paprika, mixing well to coat the rice with the vegetables.
- Pour in the vegetable broth and bring to a boil. Reduce heat to low, cover, and simmer for about 15 minutes or until the rice is cooked and the liquid is absorbed.
- While the rice cooks, heat the remaining tablespoon of olive oil in a separate skillet over medium heat. Add the shrimp, seasoning with salt and black pepper, and cook for about 3-4 minutes until pink and opaque.
- Once the rice is done, fluff it with a fork and gently fold in the cooked shrimp and chopped cilantro. Drizzle with lime juice before serving.
- Serve warm, garnished with additional cilantro if desired.
