- Brown rice - 150g
- Vegetable broth - 500ml
- Olive oil - 1 tablespoon
- Onion - 1 medium, diced
- Garlic - 2 cloves, minced
- Red bell pepper - 1, diced
- Green bell pepper - 1, diced
- Carrot - 1 medium, diced
- Tomato - 1 medium, diced
- Black olives - 50g, sliced
- Corn - 100g (canned or frozen)
- Peas - 100g (canned or frozen)
- Paprika - 1 teaspoon
- Cumin - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Rinse the brown rice under cold water until the water runs clear, then drain.
- In a medium saucepan, heat the olive oil over medium heat. Add the diced onion and minced garlic, and sauté until translucent, about 3-4 minutes.
- Add the diced red and green bell peppers, and carrot to the pan. Sauté for another 5 minutes until the vegetables are tender.
- Stir in the diced tomato, paprika, cumin, salt, and black pepper. Cook for an additional 2 minutes.
- Add the rinsed brown rice to the vegetable mixture, stirring well to combine.
- Pour in the vegetable broth, bring to a boil, then reduce heat to low. Cover and simmer for about 20 minutes, or until the rice is tender and liquid is absorbed.
- Once cooked, remove from heat and stir in the black olives, corn, and peas. Adjust seasoning if necessary.
- Fluff the rice with a fork and let it sit covered for 5 minutes before serving.
- Garnish with fresh parsley and serve warm.
