Ingredients

  • Brown rice - 150g
  • Vegetable broth - 500ml
  • Olive oil - 1 tablespoon
  • Onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Red bell pepper - 1, diced
  • Green bell pepper - 1, diced
  • Carrot - 1 medium, diced
  • Tomato - 1 medium, diced
  • Black olives - 50g, sliced
  • Corn - 100g (canned or frozen)
  • Peas - 100g (canned or frozen)
  • Paprika - 1 teaspoon
  • Cumin - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Rinse the brown rice under cold water until the water runs clear, then drain.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the diced onion and minced garlic, and sauté until translucent, about 3-4 minutes.
  3. Add the diced red and green bell peppers, and carrot to the pan. Sauté for another 5 minutes until the vegetables are tender.
  4. Stir in the diced tomato, paprika, cumin, salt, and black pepper. Cook for an additional 2 minutes.
  5. Add the rinsed brown rice to the vegetable mixture, stirring well to combine.
  6. Pour in the vegetable broth, bring to a boil, then reduce heat to low. Cover and simmer for about 20 minutes, or until the rice is tender and liquid is absorbed.
  7. Once cooked, remove from heat and stir in the black olives, corn, and peas. Adjust seasoning if necessary.
  8. Fluff the rice with a fork and let it sit covered for 5 minutes before serving.
  9. Garnish with fresh parsley and serve warm.
