- Garlic - 2 cloves, minced
- Vegetable broth - 2 cups (480ml)
- Olive oil - 1 tablespoon (15ml)
- Salt - 1 teaspoon (5g)
- Black pepper - 1/2 teaspoon (2g)
- Parmesan cheese - 2 tablespoons, grated (10g)
Steps
- In a medium pot, heat the olive oil over medium heat and sauté the chopped onion until translucent, about 3-4 minutes.
- Add the minced garlic and sauté for another minute until fragrant.
- Stir in the rice and cook for 2-3 minutes, allowing it to toast slightly.
- Pour in the vegetable broth, add salt and pepper, and bring to a boil.
- Once boiling, reduce the heat to low, cover, and simmer for 15 minutes.
- While the rice is cooking, steam the broccoli florets until tender, about 5-7 minutes.
- Once the rice is cooked, remove from heat and fluff with a fork.
- Gently fold in the steamed broccoli and grated Parmesan cheese.
