Ingredients

  • Broccoli florets - 1 cup (150g)
  • Onion - 1 small, finely chopped (70g)
  • Garlic - 2 cloves, minced
  • Vegetable broth - 2 cups (480ml)
  • Olive oil - 1 tablespoon (15ml)
  • Salt - 1 teaspoon (5g)
  • Black pepper - 1/2 teaspoon (2g)
  • Parmesan cheese - 2 tablespoons, grated (10g)

Steps

  1. In a medium pot, heat the olive oil over medium heat and sauté the chopped onion until translucent, about 3-4 minutes.
  2. Add the minced garlic and sauté for another minute until fragrant.
  3. Stir in the rice and cook for 2-3 minutes, allowing it to toast slightly.
  4. Pour in the vegetable broth, add salt and pepper, and bring to a boil.
  5. Once boiling, reduce the heat to low, cover, and simmer for 15 minutes.
  6. While the rice is cooking, steam the broccoli florets until tender, about 5-7 minutes.
  7. Once the rice is cooked, remove from heat and fluff with a fork.
  8. Gently fold in the steamed broccoli and grated Parmesan cheese.
