- Vegetable broth - 300 ml
- Olive oil - 2 tablespoons
- Fresh parsley (chopped) - 2 tablespoons
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- Heat the olive oil in a medium saucepan over medium heat.
- Add the chopped onion and minced garlic, sautéing until translucent, about 3-4 minutes.
- Stir in the grated beetroot and cook for another 2 minutes.
- Add the rice to the pot, stirring well to coat the grains in the oil and beetroot mixture.
- Pour in the vegetable broth and add salt and black pepper.
- Bring to a boil, then reduce the heat to low, cover, and simmer for about 18-20 minutes or until the rice is tender and the liquid is absorbed.
- Remove from heat and let it sit covered for an additional 5 minutes.
- Fluff the rice with a fork, stir in the chopped parsley, and serve warm.
