  • Garlic (minced) - 2 cloves
  • Vegetable broth - 500 ml
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley (chopped) - 2 tablespoons
  • Parmesan cheese (grated) - 30 grams (optional)

Steps

  1. Heat the olive oil in a medium saucepan over medium heat.
  2. Add the chopped onion and minced garlic, sautéing until translucent, about 3-4 minutes.
  3. Add the cubed pumpkin to the saucepan and cook for another 5 minutes, stirring occasionally.
  4. Stir in the Arborio rice, ensuring it's well coated with the oil and mixed with the pumpkin.
  5. Pour in the vegetable broth and bring to a boil. Reduce heat to low, cover, and simmer for 15-20 minutes until the rice is creamy and cooked through.
  6. Season with salt and black pepper, then remove from heat.
  7. Stir in the chopped parsley and grated Parmesan cheese, if using.
  8. Serve warm, garnished with extra parsley if desired.
