- Saffron threads - 1/4 teaspoon
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Onion - 1 small, finely chopped
- Bell pepper - 1/2, diced
- Salt - 1 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
Steps
- In a small bowl, soak the saffron threads in 2 tablespoons of warm water for about 10 minutes to release their color and flavor.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent.
- Add the diced bell pepper to the saucepan and cook for another 3-4 minutes until softened.
- Stir in the rice, allowing it to toast for about 2 minutes while stirring frequently.
- Pour in the saffron water along with the remaining water, salt, and black pepper. Bring to a boil.
- Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for about 18-20 minutes or until the rice is cooked and water is absorbed.
- Remove from heat and let it sit for 5 minutes before fluffing with a fork. Stir in the chopped parsley before serving.
