  • Garlic - 2 cloves, minced
  • Onion - 1 small, finely chopped
  • Bell pepper - 1/2, diced
  • Salt - 1 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. In a small bowl, soak the saffron threads in 2 tablespoons of warm water for about 10 minutes to release their color and flavor.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent.
  3. Add the diced bell pepper to the saucepan and cook for another 3-4 minutes until softened.
  4. Stir in the rice, allowing it to toast for about 2 minutes while stirring frequently.
  5. Pour in the saffron water along with the remaining water, salt, and black pepper. Bring to a boil.
  6. Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for about 18-20 minutes or until the rice is cooked and water is absorbed.
  7. Remove from heat and let it sit for 5 minutes before fluffing with a fork. Stir in the chopped parsley before serving.
