  • Lemon zest - from 1 lemon

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then set aside.
  2. In a medium saucepan, heat the olive oil over medium heat and add the chopped onion. Sauté until the onion is translucent, about 5 minutes.
  3. Add the minced garlic to the pan and sauté for an additional 1 minute until fragrant.
  4. Stir in the chopped walnuts and cook for about 2 minutes, allowing them to toast slightly.
  5. Add the rinsed rice to the saucepan, stirring well to combine with the onion, garlic, and walnuts.
  6. Pour in the vegetable broth and season with salt and black pepper to taste. Bring the mixture to a boil.
  7. Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 15-20 minutes, or until the rice is cooked and the liquid is absorbed.
  8. Remove the pot from heat and let it sit, covered, for an additional 5 minutes.
  9. Fluff the rice with a fork, then stir in the fresh parsley and lemon zest before serving.
