- Garlic - 2 cloves, minced
- Vegetable broth - 2 cups (480ml)
- Bell pepper - 1 small, diced
- Fresh parsley - 2 tablespoons, chopped
- Bay leaf - 1
- Salt - to taste
- Black pepper - to taste
Steps
- Rinse the long-grain rice under cold water until the water runs clear, then drain it.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and diced bell pepper to the pan, cooking for an additional 2-3 minutes until fragrant.
- Stir in the fresh corn kernels and sauté for another 2 minutes.
- Add the rinsed rice to the saucepan, stirring well to coat the grains with the oil and mix with the vegetables.
- Pour in the vegetable broth, add the bay leaf, and season with salt and black pepper to taste.
- Bring the mixture to a boil, then reduce the heat to low, cover the saucepan, and let it simmer for 15-20 minutes, or until the rice is tender and the liquid is absorbed.
- Once cooked, remove from heat, discard the bay leaf, and fluff the rice with a fork.
- Stir in the chopped parsley, adjust seasoning if necessary, and serve warm.
