  • Fresh corn kernels - 1 cup (150g)
  • Olive oil - 2 tablespoons (30ml)
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Vegetable broth - 2 cups (480ml)
  • Bell pepper - 1 small, diced
  • Fresh parsley - 2 tablespoons, chopped
  • Bay leaf - 1
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the long-grain rice under cold water until the water runs clear, then drain it.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and diced bell pepper to the pan, cooking for an additional 2-3 minutes until fragrant.
  4. Stir in the fresh corn kernels and sauté for another 2 minutes.
  5. Add the rinsed rice to the saucepan, stirring well to coat the grains with the oil and mix with the vegetables.
  6. Pour in the vegetable broth, add the bay leaf, and season with salt and black pepper to taste.
  7. Bring the mixture to a boil, then reduce the heat to low, cover the saucepan, and let it simmer for 15-20 minutes, or until the rice is tender and the liquid is absorbed.
  8. Once cooked, remove from heat, discard the bay leaf, and fluff the rice with a fork.
  9. Stir in the chopped parsley, adjust seasoning if necessary, and serve warm.
