  • Brown rice - 150 grams
  • Linguiça (smoked sausage) - 100 grams, sliced
  • Onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Red bell pepper - 1, diced
  • Tomato - 1 medium, diced
  • Vegetable broth - 400 ml
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Parsley - 1 tablespoon, chopped

Steps

  1. Heat the olive oil in a medium saucepan over medium heat.
  2. Add the diced onion and minced garlic, sautéing until the onion becomes translucent.
  3. Stir in the sliced linguiça and cook until browned, about 5 minutes.
  4. Add the diced red bell pepper and tomato, cooking for another 3 minutes until softened.
  5. Add the brown rice to the saucepan, stirring well to coat it in the oil and flavors.
  6. Pour in the vegetable broth, and season with salt and black pepper to taste.
  7. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for about 20 minutes or until the rice is tender and the liquid is absorbed.
  8. Remove from heat, let it sit covered for 5 minutes, then fluff with a fork and sprinkle chopped parsley before serving.
