- Red bell pepper - 1, diced
- Tomato - 1 medium, diced
- Vegetable broth - 400 ml
- Olive oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Parsley - 1 tablespoon, chopped
Steps
- Heat the olive oil in a medium saucepan over medium heat.
- Add the diced onion and minced garlic, sautéing until the onion becomes translucent.
- Stir in the sliced linguiça and cook until browned, about 5 minutes.
- Add the diced red bell pepper and tomato, cooking for another 3 minutes until softened.
- Add the brown rice to the saucepan, stirring well to coat it in the oil and flavors.
- Pour in the vegetable broth, and season with salt and black pepper to taste.
- Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for about 20 minutes or until the rice is tender and the liquid is absorbed.
- Remove from heat, let it sit covered for 5 minutes, then fluff with a fork and sprinkle chopped parsley before serving.
