- Green or brown lentils - 1/2 cup (100g)
- Onion - 1 medium, diced
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Bell pepper - 1/2, diced
- Vegetable broth - 2 cups (500ml)
- Olive oil - 2 tablespoons
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Bay leaf - 1
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Rinse the lentils under cold water until the water runs clear, then set aside.
- In a medium saucepan, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic, diced carrot, and bell pepper; cook for an additional 5 minutes until the vegetables soften.
- Stir in the cumin, paprika, salt, and pepper, and cook for 1 minute until fragrant.
- Add the rinsed lentils, rice, vegetable broth, and bay leaf to the saucepan. Stir well to combine.
- Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for about 25 minutes or until the rice is cooked and the lentils are tender.
- Once done, remove from heat and let it sit covered for an additional 5 minutes.
- Remove the bay leaf, fluff the rice and lentils with a fork, and garnish with fresh parsley before serving.
