  • Green or brown lentils - 1/2 cup (100g)
  • Onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Bell pepper - 1/2, diced
  • Vegetable broth - 2 cups (500ml)
  • Olive oil - 2 tablespoons
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Bay leaf - 1
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Rinse the lentils under cold water until the water runs clear, then set aside.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
  3. Add the minced garlic, diced carrot, and bell pepper; cook for an additional 5 minutes until the vegetables soften.
  4. Stir in the cumin, paprika, salt, and pepper, and cook for 1 minute until fragrant.
  5. Add the rinsed lentils, rice, vegetable broth, and bay leaf to the saucepan. Stir well to combine.
  6. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for about 25 minutes or until the rice is cooked and the lentils are tender.
  7. Once done, remove from heat and let it sit covered for an additional 5 minutes.
  8. Remove the bay leaf, fluff the rice and lentils with a fork, and garnish with fresh parsley before serving.
