- Green lentils - 50 grams

- Carrot - 1 medium, diced
- Olive oil - 2 tablespoons
- Vegetable broth - 300 milliliters
- Bay leaf - 1
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Rinse the lentils under cold water and set aside.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until they are translucent.
- Add the diced carrot to the saucepan and cook for another 2-3 minutes until softened.
- Stir in the lentils and cook for an additional minute before adding the vegetable broth and bay leaf.
- Bring the mixture to a boil, then reduce heat to low and cover. Simmer for about 15 minutes, or until the lentils are tender.
- While the lentils are cooking, rinse the rice under cold water until the water runs clear.
- In a separate pot, combine the rinsed rice with 200 milliliters of water and a pinch of salt. Bring it to a boil, then reduce to low heat, cover, and cook for 15 minutes or until the rice is fluffy and all the water is absorbed.
- Once both the lentils and rice are cooked, remove the bay leaf from the lentil mixture. Combine the lentils with the rice, mixing gently to combine.
- Season with salt and black pepper to taste. Serve hot, garnished with fresh parsley.
