  • Long grain white rice - 100 grams
  • Green lentils - 50 grams

  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Olive oil - 2 tablespoons
  • Vegetable broth - 300 milliliters
  • Bay leaf - 1
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Rinse the lentils under cold water and set aside.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until they are translucent.
  3. Add the diced carrot to the saucepan and cook for another 2-3 minutes until softened.
  4. Stir in the lentils and cook for an additional minute before adding the vegetable broth and bay leaf.
  5. Bring the mixture to a boil, then reduce heat to low and cover. Simmer for about 15 minutes, or until the lentils are tender.
  6. While the lentils are cooking, rinse the rice under cold water until the water runs clear.
  7. In a separate pot, combine the rinsed rice with 200 milliliters of water and a pinch of salt. Bring it to a boil, then reduce to low heat, cover, and cook for 15 minutes or until the rice is fluffy and all the water is absorbed.
  8. Once both the lentils and rice are cooked, remove the bay leaf from the lentil mixture. Combine the lentils with the rice, mixing gently to combine.
  9. Season with salt and black pepper to taste. Serve hot, garnished with fresh parsley.
