- Vegetable broth - 500 ml
- Olive oil - 2 tablespoons
- Onion - 1 medium, diced
- Garlic - 3 cloves, minced
- Bell pepper - 1 medium, diced
- Carrot - 1 medium, diced
- Zucchini - 1 small, diced
- Tomato - 1 medium, diced
- Frozen peas - 100 grams
- Smoked paprika - 1 teaspoon
- Turmeric - 1/2 teaspoon
- Cumin - 1/2 teaspoon
- Bay leaf - 1
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- In a medium pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
- Add the minced garlic, bell pepper, and carrot to the pot. Cook for another 5 minutes, stirring occasionally.
- Stir in the zucchini and tomato, cooking for an additional 3 minutes until they soften.
- Add the brown rice, smoked paprika, turmeric, cumin, bay leaf, salt, and black pepper. Mix well to coat the rice with the spices.
- Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to low, cover, and simmer for about 30 minutes or until the rice is cooked and the liquid is absorbed.
- In the last 5 minutes of cooking, add the frozen peas and stir to combine.
- Once cooked, remove from heat, discard the bay leaf, and let it sit covered for 5 minutes. Fluff the rice with a fork and garnish with fresh parsley before serving.
