Ingredients

  • Brown rice - 150 grams
  • Vegetable broth - 500 ml
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, diced
  • Garlic - 3 cloves, minced
  • Bell pepper - 1 medium, diced
  • Carrot - 1 medium, diced
  • Zucchini - 1 small, diced
  • Tomato - 1 medium, diced
  • Frozen peas - 100 grams
  • Smoked paprika - 1 teaspoon
  • Turmeric - 1/2 teaspoon
  • Cumin - 1/2 teaspoon
  • Bay leaf - 1
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. In a medium pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic, bell pepper, and carrot to the pot. Cook for another 5 minutes, stirring occasionally.
  3. Stir in the zucchini and tomato, cooking for an additional 3 minutes until they soften.
  4. Add the brown rice, smoked paprika, turmeric, cumin, bay leaf, salt, and black pepper. Mix well to coat the rice with the spices.
  5. Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to low, cover, and simmer for about 30 minutes or until the rice is cooked and the liquid is absorbed.
  6. In the last 5 minutes of cooking, add the frozen peas and stir to combine.
  7. Once cooked, remove from heat, discard the bay leaf, and let it sit covered for 5 minutes. Fluff the rice with a fork and garnish with fresh parsley before serving.
