  • Fresh green beans - 200 grams
  • Vegetable broth - 400 milliliters
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 1 tablespoon, chopped

Steps

  1. Rinse the white rice under cold water until the water runs clear, then drain and set aside.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Add the minced garlic and sauté for another minute until fragrant.
  4. Add the rinsed rice to the saucepan and stir well to coat the rice with the oil and onion mixture.
  5. Pour in the vegetable broth and bring to a boil. Reduce the heat to low, cover, and simmer for about 15 minutes.
  6. While the rice is cooking, trim the ends of the green beans and cut them into 2-3 cm pieces.
  7. After 15 minutes, add the green beans to the rice, stir gently, cover, and cook for an additional 5-7 minutes until the rice and beans are tender and the liquid is absorbed.
  8. Season with salt and black pepper to taste. Fluff the rice with a fork and stir in the chopped parsley before serving.
