- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - 1 tablespoon, chopped
Steps
- Rinse the white rice under cold water until the water runs clear, then drain and set aside.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic and sauté for another minute until fragrant.
- Add the rinsed rice to the saucepan and stir well to coat the rice with the oil and onion mixture.
- Pour in the vegetable broth and bring to a boil. Reduce the heat to low, cover, and simmer for about 15 minutes.
- While the rice is cooking, trim the ends of the green beans and cut them into 2-3 cm pieces.
- After 15 minutes, add the green beans to the rice, stir gently, cover, and cook for an additional 5-7 minutes until the rice and beans are tender and the liquid is absorbed.
- Season with salt and black pepper to taste. Fluff the rice with a fork and stir in the chopped parsley before serving.
