  • Black beans (cooked) - 1 cup (240g)
  • Onion - 1 medium (150g), diced
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons (30ml)
  • Vegetable broth - 2 cups (480ml)
  • Bay leaf - 1
  • Cumin powder - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - 2 tablespoons, chopped (for garnish)

Steps

  1. Rinse the rice under cold water until the water runs clear, then drain and set aside.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent.
  3. Add the minced garlic and sauté for another minute until fragrant.
  4. Stir in the rinsed rice and cook for 2-3 minutes, stirring frequently to toast the rice slightly.
  5. Add the vegetable broth, cooked black beans, bay leaf, cumin, salt, and black pepper. Stir to combine and bring to a boil.
  6. Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for 15-20 minutes, or until the rice is cooked and the liquid is absorbed.
  7. Remove from heat and let it sit covered for an additional 5 minutes.
  8. Fluff the rice with a fork, remove the bay leaf, and garnish with chopped cilantro before serving.
