- Vegetable broth - 300 milliliters

- Black pepper - to taste
- Lemon juice - 1 tablespoon
- Parmesan cheese - 20 grams, grated (optional)
Steps
- Rinse the rice under cold water until the water runs clear, then drain and set aside.
- In a medium-sized pot, heat the olive oil over medium heat and add the chopped onion. Sauté for 3-4 minutes until translucent.
- Add the minced garlic and cook for an additional 1-2 minutes until fragrant.
- Stir in the rinsed rice and cook for 2-3 minutes, ensuring the rice is well-coated with the oil and mixed with the onions and garlic.
- Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for 15 minutes.
- While the rice is cooking, wash the spinach thoroughly and chop it roughly.
- After 15 minutes, remove the pot from heat and stir in the chopped spinach, salt, black pepper, and lemon juice. Cover and let it sit for an additional 5 minutes to wilt the spinach.
- If desired, sprinkle with grated Parmesan cheese before serving. Fluff the rice with a fork and serve warm.
