- Basmati rice - 150 grams
- Green peas (fresh or frozen) - 100 grams
- Onion (finely chopped) - 1 medium
- Garlic (minced) - 2 cloves
- Olive oil - 2 tablespoons
- Vegetable broth - 400 milliliters
- Bay leaf - 1
- Salt - to taste
- Black pepper - to taste
- Fresh parsley (chopped) - 2 tablespoons
Steps
- Rinse the basmati rice under cold water until the water runs clear; this removes excess starch.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and cook for an additional minute until fragrant.
- Stir in the rinsed rice, bay leaf, salt, and pepper. Cook for 2-3 minutes, stirring occasionally to toast the rice lightly.
- Pour in the vegetable broth and bring to a boil. Once boiling, reduce heat to low, cover, and let it simmer for 15 minutes.
- After 15 minutes, add the green peas to the rice, stir gently, and cover again. Cook for another 5 minutes until the peas are tender and the rice has absorbed the liquid.
- Remove from heat, discard the bay leaf, and fluff the rice with a fork. Stir in the chopped parsley before serving.
