Ingredients

  • Long-grain white rice - 150 grams
  • Fresh or frozen green peas - 100 grams
  • Vegetable broth - 400 milliliters
  • Olive oil - 1 tablespoon
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Rinse the rice under cold water until the water runs clear, then drain and set aside.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Add the minced garlic and sauté for an additional minute until fragrant.
  4. Stir in the rice, coating it with the onion and garlic mixture, and cook for 2-3 minutes until slightly toasted.
  5. Pour in the vegetable broth, salt, and black pepper. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes.
  6. After 15 minutes, add the green peas on top of the rice without stirring. Cover and cook for an additional 5 minutes, allowing the peas to steam.
  7. Remove from heat and let it sit covered for another 5 minutes to finish cooking.
  8. Fluff the rice with a fork, stir in the chopped parsley and lemon juice, and serve warm.
