- Fresh or frozen green peas - 100 grams
- Vegetable broth - 400 milliliters
- Olive oil - 1 tablespoon
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
Steps
- Rinse the rice under cold water until the water runs clear, then drain and set aside.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic and sauté for an additional minute until fragrant.
- Stir in the rice, coating it with the onion and garlic mixture, and cook for 2-3 minutes until slightly toasted.
- Pour in the vegetable broth, salt, and black pepper. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes.
- After 15 minutes, add the green peas on top of the rice without stirring. Cover and cook for an additional 5 minutes, allowing the peas to steam.
- Remove from heat and let it sit covered for another 5 minutes to finish cooking.
- Fluff the rice with a fork, stir in the chopped parsley and lemon juice, and serve warm.
