  • Vegetable broth - 300 milliliters
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 1 tablespoon, chopped (for garnish)

Steps

  1. Rinse the white rice under cold water until the water runs clear to remove excess starch.
  2. In a medium saucepan, heat the olive oil over medium heat and sauté the chopped onion until translucent, about 3-4 minutes.
  3. Add the minced garlic and grated carrots, cooking for another 2-3 minutes until the carrots soften.
  4. Stir in the rinsed rice and toast it slightly for 1-2 minutes, mixing well with the vegetables.
  5. Pour in the vegetable broth, add salt and black pepper, and bring to a boil.
  6. Once boiling, reduce the heat to low, cover the pot, and let it simmer for 15-20 minutes, or until the rice is cooked and the liquid is absorbed.
  7. Remove from heat and let it sit covered for another 5 minutes. Fluff the rice with a fork.
  8. Serve hot, garnished with chopped fresh parsley.
