Ingredients

  • Basmati rice - 1 cup (200 grams)
  • Shredded halal carne seca (dried beef) - 150 grams
  • Onion - 1 medium, chopped (150 grams)
  • Garlic - 2 cloves, minced
  • Bell pepper - 1/2 medium, chopped (75 grams)
  • Tomato - 1 medium, chopped (120 grams)
  • Olive oil - 2 tablespoons (30 ml)
  • Vegetable broth - 2 cups (500 ml)
  • Bay leaf - 1
  • Cilantro - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
  2. In a medium pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until translucent, about 5 minutes.
  3. Add the shredded carne seca to the pot and cook for another 5 minutes, stirring occasionally.
  4. Stir in the bell pepper and tomato, cooking for an additional 3-4 minutes until softened.
  5. Drain the soaked rice and add it to the pot, stirring to combine all ingredients.
  6. Pour in the vegetable broth and add the bay leaf. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until the rice is cooked and the liquid is absorbed.
  7. Once cooked, remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork before serving.
  8. Garnish with chopped cilantro, and season with salt and black pepper to taste.
