- Basmati rice - 1 cup (200 grams)
- Shredded halal carne seca (dried beef) - 150 grams
- Onion - 1 medium, chopped (150 grams)
- Garlic - 2 cloves, minced
- Bell pepper - 1/2 medium, chopped (75 grams)
- Tomato - 1 medium, chopped (120 grams)
- Olive oil - 2 tablespoons (30 ml)
- Vegetable broth - 2 cups (500 ml)
- Bay leaf - 1
- Cilantro - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
- In a medium pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until translucent, about 5 minutes.
- Add the shredded carne seca to the pot and cook for another 5 minutes, stirring occasionally.
- Stir in the bell pepper and tomato, cooking for an additional 3-4 minutes until softened.
- Drain the soaked rice and add it to the pot, stirring to combine all ingredients.
- Pour in the vegetable broth and add the bay leaf. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until the rice is cooked and the liquid is absorbed.
- Once cooked, remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork before serving.
- Garnish with chopped cilantro, and season with salt and black pepper to taste.
