- Basmati rice - 150 grams
- Shrimp (peeled and deveined) - 200 grams
- Olive oil - 2 tablespoons
- Onion (finely chopped) - 1 medium
- Garlic (minced) - 2 cloves
- Red bell pepper (diced) - 1/2
- Green bell pepper (diced) - 1/2
- Tomato (diced) - 1 medium
- Cilantro (chopped) - 2 tablespoons
- Lime juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Water - 400 ml
Steps
- Rinse the basmati rice under cold water until the water runs clear, then drain and set aside.
- In a medium saucepan, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic and sauté for an additional minute until fragrant.
- Stir in the diced red and green bell peppers and cook for another 3-4 minutes until they begin to soften.
- Add the diced tomato and cook for an additional 2 minutes, stirring occasionally.
- Add the rinsed basmati rice to the saucepan and stir to combine with the vegetables.
- Pour in 400 ml of water, add salt and black pepper to taste, and bring to a boil.
- Once boiling, reduce heat to low, cover, and simmer for 15 minutes or until the rice is cooked and water is absorbed.
- While the rice is cooking, heat the remaining tablespoon of olive oil in a skillet over medium-high heat. Add the shrimp and season with salt and black pepper.
- Cook the shrimp for about 3-4 minutes, turning occasionally, until they are pink and opaque.
- Once the rice is cooked, fluff it with a fork and gently stir in the cooked shrimp, chopped cilantro, and lime juice.
- Serve hot, garnished with additional cilantro if desired.
