Ingredients

  • Basmati rice - 150 grams
  • Shrimp (peeled and deveined) - 200 grams
  • Olive oil - 2 tablespoons
  • Onion (finely chopped) - 1 medium
  • Garlic (minced) - 2 cloves
  • Red bell pepper (diced) - 1/2
  • Green bell pepper (diced) - 1/2
  • Tomato (diced) - 1 medium
  • Cilantro (chopped) - 2 tablespoons
  • Lime juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Water - 400 ml

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then drain and set aside.
  2. In a medium saucepan, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Add the minced garlic and sauté for an additional minute until fragrant.
  4. Stir in the diced red and green bell peppers and cook for another 3-4 minutes until they begin to soften.
  5. Add the diced tomato and cook for an additional 2 minutes, stirring occasionally.
  6. Add the rinsed basmati rice to the saucepan and stir to combine with the vegetables.
  7. Pour in 400 ml of water, add salt and black pepper to taste, and bring to a boil.
  8. Once boiling, reduce heat to low, cover, and simmer for 15 minutes or until the rice is cooked and water is absorbed.
  9. While the rice is cooking, heat the remaining tablespoon of olive oil in a skillet over medium-high heat. Add the shrimp and season with salt and black pepper.
  10. Cook the shrimp for about 3-4 minutes, turning occasionally, until they are pink and opaque.
  11. Once the rice is cooked, fluff it with a fork and gently stir in the cooked shrimp, chopped cilantro, and lime juice.
  12. Serve hot, garnished with additional cilantro if desired.
