- Garlic, minced - 2 cloves
- Olive oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley, chopped - 2 tablespoons
Steps
- Rinse the basmati rice under cold water until the water runs clear, then drain.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent.
- Add the minced garlic and sauté for an additional 1-2 minutes until fragrant, being careful not to burn it.
- Stir in the grated beetroot and cook for another 2-3 minutes, allowing the flavors to meld.
- Add the rinsed rice to the saucepan and stir to combine with the beet mixture.
- Pour in the vegetable broth and season with salt and black pepper to taste. Bring to a boil.
- Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for about 15-20 minutes or until the rice is cooked and the liquid is absorbed.
- Remove from heat and let it sit covered for 5 minutes, then fluff the rice with a fork.
- Serve warm, garnished with fresh chopped parsley.
