- Vegetable broth - 400 milliliters
- Green olives - 100 grams, pitted and sliced
- Black olives - 50 grams, pitted and sliced
- Fresh parsley - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- In a medium saucepan, heat the olive oil over medium heat.
- Add the chopped onion and minced garlic, sautéing until the onion is translucent, about 3-4 minutes.
- Stir in the Arborio rice, cooking for another 2 minutes until the rice is lightly toasted.
- Pour in the vegetable broth and bring to a boil.
- Reduce the heat to low, cover the saucepan, and simmer for 15-18 minutes, or until the rice is cooked and has absorbed the liquid.
- Once the rice is done, remove it from the heat and fluff it with a fork.
- Stir in the sliced green and black olives, chopped parsley, salt, and black pepper to taste.
- Serve warm, garnished with additional parsley if desired.
