  • Arborio rice - 150 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Onion - 1 small, finely chopped
  • Vegetable broth - 400 milliliters
  • Green olives - 100 grams, pitted and sliced
  • Black olives - 50 grams, pitted and sliced
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a medium saucepan, heat the olive oil over medium heat.
  2. Add the chopped onion and minced garlic, sautéing until the onion is translucent, about 3-4 minutes.
  3. Stir in the Arborio rice, cooking for another 2 minutes until the rice is lightly toasted.
  4. Pour in the vegetable broth and bring to a boil.
  5. Reduce the heat to low, cover the saucepan, and simmer for 15-18 minutes, or until the rice is cooked and has absorbed the liquid.
  6. Once the rice is done, remove it from the heat and fluff it with a fork.
  7. Stir in the sliced green and black olives, chopped parsley, salt, and black pepper to taste.
  8. Serve warm, garnished with additional parsley if desired.
