- Jasmine rice - 150 grams
- Water - 400 milliliters
- Saffron threads - 0.1 grams
- Olive oil - 2 tablespoons
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Bell pepper (red or yellow) - 1/2, diced
- Salt - 1 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
Steps
- In a small bowl, combine the saffron threads with 2 tablespoons of warm water and let it steep for about 10 minutes.
- Rinse the jasmine rice under cold water until the water runs clear, then drain.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until it's translucent, about 3-4 minutes.
- Add the minced garlic and diced bell pepper to the pan, cooking for an additional 2-3 minutes until fragrant.
- Stir in the rinsed rice, followed by the salt, black pepper, and the saffron along with its soaking water.
- Pour in the 400 milliliters of water, bring the mixture to a boil, then reduce the heat to low and cover the saucepan.
- Let it simmer for about 15-20 minutes, or until the rice is cooked and all the water is absorbed.
- Once done, remove from heat and let it sit covered for 5 minutes before fluffing with a fork.
- Garnish with fresh chopped parsley before serving.
