Ingredients

  • Jasmine rice - 150 grams
  • Water - 400 milliliters
  • Saffron threads - 0.1 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Bell pepper (red or yellow) - 1/2, diced
  • Salt - 1 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. In a small bowl, combine the saffron threads with 2 tablespoons of warm water and let it steep for about 10 minutes.
  2. Rinse the jasmine rice under cold water until the water runs clear, then drain.
  3. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until it's translucent, about 3-4 minutes.
  4. Add the minced garlic and diced bell pepper to the pan, cooking for an additional 2-3 minutes until fragrant.
  5. Stir in the rinsed rice, followed by the salt, black pepper, and the saffron along with its soaking water.
  6. Pour in the 400 milliliters of water, bring the mixture to a boil, then reduce the heat to low and cover the saucepan.
  7. Let it simmer for about 15-20 minutes, or until the rice is cooked and all the water is absorbed.
  8. Once done, remove from heat and let it sit covered for 5 minutes before fluffing with a fork.
  9. Garnish with fresh chopped parsley before serving.
