  • Black olives - 50 grams, sliced
  • Fresh parsley - 2 tablespoons, chopped
  • Smoked paprika - 1 teaspoon
  • Cumin - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Heat the olive oil in a medium saucepan over medium heat.
  2. Add the chopped onion and minced garlic, sauté until translucent, about 3-4 minutes.
  3. Stir in the diced bell pepper, carrot, and zucchini, cooking for another 5 minutes until they begin to soften.
  4. Add the diced tomato, smoked paprika, cumin, salt, and black pepper, cooking for an additional 2 minutes.
  5. Pour in the long-grain rice, stirring well to coat the rice with the vegetable mixture.
  6. Add the vegetable broth and bring to a boil.
  7. Reduce the heat to low, cover the saucepan, and simmer for about 15-20 minutes, or until the rice is cooked and the liquid is absorbed.
  8. Remove from heat and let it sit covered for 5 minutes.
