- Beef (chuck or flank) - 200 grams, diced

- Garlic - 2 cloves, minced
- Bell pepper - 1 medium, chopped
- Tomato - 1 medium, diced
- Olive oil - 2 tablespoons
- Beef broth - 500 ml
- Parsley - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
- Bay leaf - 1
Steps
- In a large skillet, heat the olive oil over medium heat.
- Add the diced beef and cook until browned on all sides, about 5-7 minutes.
- Remove the beef from the skillet and set aside. In the same skillet, add the chopped onion and cook until translucent, about 3-4 minutes.
- Stir in the minced garlic, chopped bell pepper, and diced tomato, cooking for another 5 minutes until the vegetables soften.
- Return the beef to the skillet and add the rice, stirring well to combine with the vegetables.
- Pour in the beef broth, add the bay leaf, and season with salt and black pepper.
- Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for about 20 minutes or until the rice is cooked and has absorbed the liquid.
- Once cooked, remove from heat, discard the bay leaf, and stir in the chopped parsley before serving.
