Ingredients

  • Long-grain rice - 150 grams
  • Beef (chuck or flank) - 200 grams, diced
  • Onion - 1 medium, chopped
  • Garlic - 2 cloves, minced
  • Bell pepper - 1 medium, chopped
  • Tomato - 1 medium, diced
  • Olive oil - 2 tablespoons
  • Beef broth - 500 ml
  • Parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Bay leaf - 1

Steps

  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the diced beef and cook until browned on all sides, about 5-7 minutes.
  3. Remove the beef from the skillet and set aside. In the same skillet, add the chopped onion and cook until translucent, about 3-4 minutes.
  4. Stir in the minced garlic, chopped bell pepper, and diced tomato, cooking for another 5 minutes until the vegetables soften.
  5. Return the beef to the skillet and add the rice, stirring well to combine with the vegetables.
  6. Pour in the beef broth, add the bay leaf, and season with salt and black pepper.
  7. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for about 20 minutes or until the rice is cooked and has absorbed the liquid.
  8. Once cooked, remove from heat, discard the bay leaf, and stir in the chopped parsley before serving.
