Ingredients
- Black-eyed peas - 150 grams
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Bell pepper - 1 small, diced
- Tomato - 1 medium, diced
- Cilantro - 2 tablespoons, chopped
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Cumin - 1/2 teaspoon
- Chili powder - 1/2 teaspoon
- Baking powder - 1/2 teaspoon
- Vegetable oil - for frying (about 500 ml)
- Lettuce leaves - for serving
- Hot sauce - for serving (optional)
Steps
- Soak the black-eyed peas in water for at least 8 hours or overnight.
- Drain and rinse the soaked peas, then blend them in a food processor until smooth, adding a little water if necessary to achieve a thick batter consistency.
- In a mixing bowl, combine the black-eyed pea batter with the chopped onion, garlic, bell pepper, tomato, cilantro, salt, black pepper, cumin, chili powder, and baking powder. Mix well.
- Heat the vegetable oil in a deep pan over medium heat.
- Once the oil is hot, carefully drop spoonfuls of the batter into the oil to form fritters. Fry until golden brown on both sides, about 3-4 minutes per side.
- Remove the fritters and place them on paper towels to drain excess oil.
- Serve the Acarajé Vegetariano warm, garnished with lettuce leaves and hot sauce if desired.
