Ingredients

  • Black-eyed peas - 150 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Bell pepper - 1 small, diced
  • Tomato - 1 medium, diced
  • Cilantro - 2 tablespoons, chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cumin - 1/2 teaspoon
  • Chili powder - 1/2 teaspoon
  • Baking powder - 1/2 teaspoon
  • Vegetable oil - for frying (about 500 ml)
  • Lettuce leaves - for serving
  • Hot sauce - for serving (optional)

Steps

  1. Soak the black-eyed peas in water for at least 8 hours or overnight.
  2. Drain and rinse the soaked peas, then blend them in a food processor until smooth, adding a little water if necessary to achieve a thick batter consistency.
  3. In a mixing bowl, combine the black-eyed pea batter with the chopped onion, garlic, bell pepper, tomato, cilantro, salt, black pepper, cumin, chili powder, and baking powder. Mix well.
  4. Heat the vegetable oil in a deep pan over medium heat.
  5. Once the oil is hot, carefully drop spoonfuls of the batter into the oil to form fritters. Fry until golden brown on both sides, about 3-4 minutes per side.
  6. Remove the fritters and place them on paper towels to drain excess oil.
  7. Serve the Acarajé Vegetariano warm, garnished with lettuce leaves and hot sauce if desired.
