- Black-eyed peas - 200 grams
- Eggs - 1 large
- Almond flour - 50 grams
- Garlic - 1 clove, minced
- Onion - 1 small, finely chopped
- Shrimp - 100 grams, peeled and deveined
- Palm oil - for frying
- Salt - to taste
- Black pepper - to taste
- Chili powder - 1/2 teaspoon
- Fresh cilantro - a handful, chopped
Steps
- Soak the black-eyed peas in water overnight or for at least 8 hours.
- Drain and rinse the black-eyed peas, then blend them in a food processor until a coarse mixture forms.
- Add the egg, almond flour, minced garlic, salt, and pepper to the black-eyed pea mixture and blend until well combined.
- In a skillet, heat palm oil over medium heat. Add the chopped onion and sauté until translucent.
- Add the shrimp, chili powder, and chopped cilantro to the skillet, cooking until the shrimp are pink and cooked through. Season with salt and pepper to taste.
- Take a portion of the black-eyed pea mixture and flatten it in your hand. Place a spoonful of the shrimp filling in the center, then fold the mixture over to encase the filling, shaping it into a patty.
- Carefully place the patties into the hot palm oil and fry until golden brown on both sides, approximately 3-4 minutes per side.
- Remove the fritters from the oil and drain on paper towels. Serve warm.
