Ingredients

  • Black-eyed peas - 200 grams
  • Eggs - 1 large
  • Almond flour - 50 grams
  • Garlic - 1 clove, minced
  • Onion - 1 small, finely chopped
  • Shrimp - 100 grams, peeled and deveined
  • Palm oil - for frying
  • Salt - to taste
  • Black pepper - to taste
  • Chili powder - 1/2 teaspoon
  • Fresh cilantro - a handful, chopped

Steps

  1. Soak the black-eyed peas in water overnight or for at least 8 hours.
  2. Drain and rinse the black-eyed peas, then blend them in a food processor until a coarse mixture forms.
  3. Add the egg, almond flour, minced garlic, salt, and pepper to the black-eyed pea mixture and blend until well combined.
  4. In a skillet, heat palm oil over medium heat. Add the chopped onion and sauté until translucent.
  5. Add the shrimp, chili powder, and chopped cilantro to the skillet, cooking until the shrimp are pink and cooked through. Season with salt and pepper to taste.
  6. Take a portion of the black-eyed pea mixture and flatten it in your hand. Place a spoonful of the shrimp filling in the center, then fold the mixture over to encase the filling, shaping it into a patty.
  7. Carefully place the patties into the hot palm oil and fry until golden brown on both sides, approximately 3-4 minutes per side.
  8. Remove the fritters from the oil and drain on paper towels. Serve warm.
