Ingredients

  • Black-eyed peas - 200 grams
  • Onion - 1 medium, finely chopped

  • Bell pepper (red or yellow) - 1, diced
  • Carrot - 1 medium, grated
  • Zucchini - 1 small, grated
  • Cilantro - 2 tablespoons, chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Baking powder - 1 teaspoon
  • Vegetable oil - for frying
  • Tomato - 1 medium, diced
  • Lettuce leaves - for serving

Steps

  1. Soak the black-eyed peas in water overnight, then drain and rinse.
  2. In a food processor, blend the soaked black-eyed peas until smooth, adding a little water if necessary.
  3. Transfer the black-eyed pea mixture to a bowl and mix in the chopped onion, garlic, baking powder, salt, and black pepper until well combined.
  4. In a separate bowl, mix the diced bell pepper, grated carrot, grated zucchini, cilantro, and diced tomato.
  5. Heat vegetable oil in a deep pan over medium heat.
  6. Using a spoon, scoop out portions of the black-eyed pea mixture and shape them into small patties.
  7. Carefully place the patties in the hot oil and fry for about 3-4 minutes on each side until golden brown and crispy.
