- Zucchini - 1 small, grated
- Cilantro - 2 tablespoons, chopped
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Baking powder - 1 teaspoon
- Vegetable oil - for frying
- Tomato - 1 medium, diced
- Lettuce leaves - for serving
Steps
- Soak the black-eyed peas in water overnight, then drain and rinse.
- In a food processor, blend the soaked black-eyed peas until smooth, adding a little water if necessary.
- Transfer the black-eyed pea mixture to a bowl and mix in the chopped onion, garlic, baking powder, salt, and black pepper until well combined.
- In a separate bowl, mix the diced bell pepper, grated carrot, grated zucchini, cilantro, and diced tomato.
- Heat vegetable oil in a deep pan over medium heat.
- Using a spoon, scoop out portions of the black-eyed pea mixture and shape them into small patties.
- Carefully place the patties in the hot oil and fry for about 3-4 minutes on each side until golden brown and crispy.
- Remove the fritters from the oil and drain on paper towels.
