- 2 medium zucchinis
- 200 grams ground beef
- 50 grams onion, finely chopped
- 2 cloves garlic, minced
- 100 grams bell pepper, diced
- 50 grams tomato, diced
- 50 grams grated mozzarella cheese
- 1 tablespoon olive oil
- 1 teaspoon smoked paprika
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Preheat the oven to 180°C (350°F).
- Cut the zucchinis in half lengthwise and scoop out the insides to create boats, leaving about 1 cm of flesh around the edges.
- In a skillet, heat the olive oil over medium heat and add the chopped onion and minced garlic, sautéing until they become translucent.
- Add the ground beef to the skillet, breaking it apart with a spatula, and cook until browned.
- Stir in the diced bell pepper, tomato, smoked paprika, salt, and black pepper. Cook for another 5 minutes until the vegetables are tender.
- Remove the skillet from heat and mix in the grated mozzarella cheese until melted and combined.
- Fill the zucchini boats with the meat mixture, packing it in well.
- Place the stuffed zucchinis in a baking dish and cover with aluminum foil.
- Bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 5-10 minutes until the zucchinis are tender and the tops are slightly golden.
- Garnish with fresh parsley before serving.
