Ingredients

  • 2 medium zucchinis
  • 200 grams ground beef
  • 50 grams onion, finely chopped
  • 2 cloves garlic, minced
  • 100 grams bell pepper, diced
  • 50 grams tomato, diced
  • 50 grams grated mozzarella cheese
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Cut the zucchinis in half lengthwise and scoop out the insides to create boats, leaving about 1 cm of flesh around the edges.
  3. In a skillet, heat the olive oil over medium heat and add the chopped onion and minced garlic, sautéing until they become translucent.
  4. Add the ground beef to the skillet, breaking it apart with a spatula, and cook until browned.
  5. Stir in the diced bell pepper, tomato, smoked paprika, salt, and black pepper. Cook for another 5 minutes until the vegetables are tender.
  6. Remove the skillet from heat and mix in the grated mozzarella cheese until melted and combined.
  7. Fill the zucchini boats with the meat mixture, packing it in well.
  8. Place the stuffed zucchinis in a baking dish and cover with aluminum foil.
  9. Bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 5-10 minutes until the zucchinis are tender and the tops are slightly golden.
  10. Garnish with fresh parsley before serving.
