Ingredients

  • Lean Italian sausage - 150 grams
  • Olive oil - 1 tablespoon
  • Yellow onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Carrots - 1 medium, diced
  • Potatoes - 200 grams, cubed
  • Chicken broth - 500 ml
  • Kale - 100 grams, chopped
  • Heavy cream - 50 ml
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Red pepper flakes - 1/4 teaspoon
  • Parmesan cheese - 20 grams, grated (for serving)

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
  2. Add the minced garlic and diced carrots, cooking for another 2 minutes until fragrant.
  3. Crumble the lean Italian sausage into the pot and cook until browned, about 5-6 minutes, breaking it apart with a spoon.
  4. Stir in the cubed potatoes, chicken broth, salt, black pepper, and red pepper flakes. Bring the mixture to a boil.
  5. Reduce heat to low and simmer for 10-15 minutes or until the potatoes are tender.
  6. Add the chopped kale and heavy cream, stirring to combine. Cook for an additional 5 minutes until the kale is wilted.
  7. Serve hot, garnished with grated Parmesan cheese.
