- Lean Italian sausage - 150 grams
- Olive oil - 1 tablespoon
- Yellow onion - 1 medium, diced
- Garlic - 2 cloves, minced
- Carrots - 1 medium, diced
- Potatoes - 200 grams, cubed
- Chicken broth - 500 ml
- Kale - 100 grams, chopped
- Heavy cream - 50 ml
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Red pepper flakes - 1/4 teaspoon
- Parmesan cheese - 20 grams, grated (for serving)
Steps
- In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic and diced carrots, cooking for another 2 minutes until fragrant.
- Crumble the lean Italian sausage into the pot and cook until browned, about 5-6 minutes, breaking it apart with a spoon.
- Stir in the cubed potatoes, chicken broth, salt, black pepper, and red pepper flakes. Bring the mixture to a boil.
- Reduce heat to low and simmer for 10-15 minutes or until the potatoes are tender.
- Add the chopped kale and heavy cream, stirring to combine. Cook for an additional 5 minutes until the kale is wilted.
- Serve hot, garnished with grated Parmesan cheese.
