- Zucchini - 1 medium (approximately 200g)
- Walnuts - 50g, chopped
- Rolled oats - 50g
- Chickpea flour - 30g
- Garlic - 2 cloves, minced
- Onion - 1 small, finely chopped
- Olive oil - 1 tablespoon
- Ground cumin - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Whole grain burger buns - 2
- Lettuce - 2 leaves
- Tomato - 1 medium, sliced
- Avocado - 1/2, sliced
Steps
- Grate the zucchini using a box grater and place it in a clean kitchen towel. Squeeze out excess moisture and set aside.
- In a skillet, heat olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until soft and translucent, about 5 minutes.
- In a mixing bowl, combine the grated zucchini, sautéed onion and garlic, chopped walnuts, rolled oats, chickpea flour, ground cumin, salt, black pepper, and fresh parsley. Mix until well combined.
- Form the mixture into 2 patties, about 1.5 cm thick.
- Heat a non-stick skillet over medium heat and cook the patties for 5-6 minutes on each side, or until golden brown.
- While the patties are cooking, toast the whole grain burger buns until golden.
- Assemble the burgers by placing a lettuce leaf on each bun, adding the cooked patty, followed by tomato slices and avocado.
- Top with the other half of the bun and serve immediately.
