Ingredients

  • Zucchini - 1 medium (approximately 200g)
  • Walnuts - 50g, chopped
  • Rolled oats - 50g
  • Chickpea flour - 30g
  • Garlic - 2 cloves, minced
  • Onion - 1 small, finely chopped
  • Olive oil - 1 tablespoon
  • Ground cumin - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Whole grain burger buns - 2
  • Lettuce - 2 leaves
  • Tomato - 1 medium, sliced
  • Avocado - 1/2, sliced

Steps

  1. Grate the zucchini using a box grater and place it in a clean kitchen towel. Squeeze out excess moisture and set aside.
  2. In a skillet, heat olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until soft and translucent, about 5 minutes.
  3. In a mixing bowl, combine the grated zucchini, sautéed onion and garlic, chopped walnuts, rolled oats, chickpea flour, ground cumin, salt, black pepper, and fresh parsley. Mix until well combined.
  4. Form the mixture into 2 patties, about 1.5 cm thick.
  5. Heat a non-stick skillet over medium heat and cook the patties for 5-6 minutes on each side, or until golden brown.
  6. While the patties are cooking, toast the whole grain burger buns until golden.
  7. Assemble the burgers by placing a lettuce leaf on each bun, adding the cooked patty, followed by tomato slices and avocado.
  8. Top with the other half of the bun and serve immediately.
