- Zucchini - 1 large (about 250g)
- Ricotta cheese - 100g
- Cream cheese - 50g
- Fresh basil - 1 tablespoon, chopped
- Garlic powder - 1/2 teaspoon
- Salt - 1/4 teaspoon
- Black pepper - 1/4 teaspoon
- Cherry tomatoes - 100g, halved
- Olive oil - 1 tablespoon
Steps
- Preheat your oven to 180°C (350°F).
- Using a mandoline or a sharp knife, slice the zucchini lengthwise into thin strips (about 3mm thick).
- Lay the zucchini slices on a clean kitchen towel and sprinkle with salt. Let them sit for 10 minutes to draw out moisture.
- In a mixing bowl, combine the ricotta cheese, cream cheese, chopped basil, garlic powder, black pepper, and salt. Mix until smooth and well combined.
- Rinse the zucchini strips under cold water to remove excess salt and pat dry with a towel.
- Spread a thin layer of the cheese mixture onto each zucchini strip, then place a few cherry tomato halves on top.
- Roll up each zucchini strip tightly and place seam-side down on a baking sheet lined with parchment paper.
- Drizzle the rolled zucchini with olive oil and bake in the preheated oven for 10 minutes until heated through and slightly golden.
- Remove from the oven and let cool slightly before serving.
