Ingredients

  • Zucchini - 1 large (about 250g)
  • Ricotta cheese - 100g
  • Cream cheese - 50g
  • Fresh basil - 1 tablespoon, chopped
  • Garlic powder - 1/2 teaspoon
  • Salt - 1/4 teaspoon
  • Black pepper - 1/4 teaspoon
  • Cherry tomatoes - 100g, halved
  • Olive oil - 1 tablespoon

Steps

  1. Preheat your oven to 180°C (350°F).
  2. Using a mandoline or a sharp knife, slice the zucchini lengthwise into thin strips (about 3mm thick).
  3. Lay the zucchini slices on a clean kitchen towel and sprinkle with salt. Let them sit for 10 minutes to draw out moisture.
  4. In a mixing bowl, combine the ricotta cheese, cream cheese, chopped basil, garlic powder, black pepper, and salt. Mix until smooth and well combined.
  5. Rinse the zucchini strips under cold water to remove excess salt and pat dry with a towel.
  6. Spread a thin layer of the cheese mixture onto each zucchini strip, then place a few cherry tomato halves on top.
  7. Roll up each zucchini strip tightly and place seam-side down on a baking sheet lined with parchment paper.
  8. Drizzle the rolled zucchini with olive oil and bake in the preheated oven for 10 minutes until heated through and slightly golden.
  9. Remove from the oven and let cool slightly before serving.
