- Marinara sauce - 4 tablespoons (60g)
- Mozzarella cheese, shredded - 1/2 cup (60g)
- Pepperoni slices - 10 pieces (about 30g)
- Italian seasoning - 1/2 teaspoon (1g)
- Fresh basil, chopped - 1 tablespoon (optional)
Steps
- Preheat the oven to 200°C (400°F).
- Slice the zucchini into 1/2-inch thick rounds and place them on a baking sheet lined with parchment paper.
- Drizzle the zucchini rounds with olive oil and sprinkle with salt and black pepper. Toss to coat evenly.
- Bake the zucchini in the preheated oven for 10 minutes, until slightly tender.
- Remove the zucchini from the oven and add 1 tablespoon of marinara sauce on each round.
- Top each zucchini round with shredded mozzarella cheese and a pepperoni slice.
- Sprinkle with Italian seasoning and return to the oven.
- Bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
- Remove from the oven, let cool for a minute, and garnish with fresh basil if desired. Serve warm.
