Ingredients

  • Salt - 1/4 teaspoon (1.5g)
  • Black pepper - 1/4 teaspoon (1g)
  • Marinara sauce - 4 tablespoons (60g)
  • Mozzarella cheese, shredded - 1/2 cup (60g)
  • Pepperoni slices - 10 pieces (about 30g)
  • Italian seasoning - 1/2 teaspoon (1g)
  • Fresh basil, chopped - 1 tablespoon (optional)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Slice the zucchini into 1/2-inch thick rounds and place them on a baking sheet lined with parchment paper.
  3. Drizzle the zucchini rounds with olive oil and sprinkle with salt and black pepper. Toss to coat evenly.
  4. Bake the zucchini in the preheated oven for 10 minutes, until slightly tender.
  5. Remove the zucchini from the oven and add 1 tablespoon of marinara sauce on each round.
  6. Top each zucchini round with shredded mozzarella cheese and a pepperoni slice.
  7. Sprinkle with Italian seasoning and return to the oven.
  8. Bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
