- Olive oil - 1/4 cup (about 60ml)
- Lemon juice - 1 tablespoon (about 15ml)
- Salt - to taste
- Black pepper - to taste
Steps
- Spiralize the zucchini using a spiralizer or a vegetable peeler to create long noodle-like strands.
- In a food processor, combine the basil leaves, pine nuts, grated Parmesan cheese, garlic clove, lemon juice, and a pinch of salt and black pepper.
- Pulse the mixture while gradually drizzling in the olive oil until you achieve a smooth consistency. Adjust seasoning to taste.
- In a large skillet over medium heat, add the zucchini noodles and sauté for 2-3 minutes until just tender but still al dente.
