  • Pine nuts - 1/4 cup (about 35g)
  • Parmesan cheese - 1/4 cup, grated (about 25g)
  • Garlic - 1 clove
  • Olive oil - 1/4 cup (about 60ml)
  • Lemon juice - 1 tablespoon (about 15ml)
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Spiralize the zucchini using a spiralizer or a vegetable peeler to create long noodle-like strands.
  2. In a food processor, combine the basil leaves, pine nuts, grated Parmesan cheese, garlic clove, lemon juice, and a pinch of salt and black pepper.
  3. Pulse the mixture while gradually drizzling in the olive oil until you achieve a smooth consistency. Adjust seasoning to taste.
  4. In a large skillet over medium heat, add the zucchini noodles and sauté for 2-3 minutes until just tender but still al dente.
  5. Remove the skillet from heat and toss the zucchini noodles with the prepared pesto until evenly coated.
