Ingredients

  • Zucchini - 2 medium (about 300g)
  • Cherry tomatoes - 200g, halved
  • Red bell pepper - 1 medium, diced
  • Cucumber - 1 medium, diced
  • Red onion - 1/4 medium, finely chopped
  • Fresh basil - 1/4 cup, chopped
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Feta cheese - 50g, crumbled (optional)

Steps

  1. Using a spiralizer or a vegetable peeler, create zucchini noodles from the two medium zucchinis and set aside in a large bowl.
  2. Add the halved cherry tomatoes, diced red bell pepper, diced cucumber, finely chopped red onion, and chopped fresh basil to the bowl with the zucchini noodles.
