Ingredients

  • Zucchini - 2 medium
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Cherry tomatoes - 200 grams, halved
  • Fresh basil - 1/4 cup, chopped
  • Lemon juice - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Parmesan cheese - 30 grams, grated (optional)

Steps

  1. Using a spiralizer, cut the zucchini into noodles and set aside.
  2. In a large skillet, heat the olive oil over medium heat.
  3. Add the minced garlic and sauté for about 1 minute until fragrant.
  4. Add the halved cherry tomatoes to the skillet and cook for 3-4 minutes until they start to soften.
  5. Add the zucchini noodles to the skillet and toss gently with the garlic and tomatoes for about 3-5 minutes until just tender.
  6. Stir in the chopped basil, lemon juice, salt, and black pepper, mixing well.
  7. Serve hot, garnished with grated Parmesan cheese if desired.
