- Zucchini - 2 medium
- Olive oil - 2 tablespoons
- Garlic - 3 cloves, minced
- Cherry tomatoes - 200 grams, halved
- Fresh basil - 1/4 cup, chopped
- Lemon juice - 2 tablespoons
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Parmesan cheese - 30 grams, grated (optional)
Steps
- Using a spiralizer, cut the zucchini into noodles and set aside.
- In a large skillet, heat the olive oil over medium heat.
- Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the halved cherry tomatoes to the skillet and cook for 3-4 minutes until they start to soften.
- Add the zucchini noodles to the skillet and toss gently with the garlic and tomatoes for about 3-5 minutes until just tender.
- Stir in the chopped basil, lemon juice, salt, and black pepper, mixing well.
- Serve hot, garnished with grated Parmesan cheese if desired.
