Ingredients
- Zucchini - 2 medium
- Ricotta cheese - 250 grams
- Fresh spinach - 100 grams
- Shredded mozzarella cheese - 100 grams
- Grated Parmesan cheese - 30 grams
- Egg - 1 large
- Marinara sauce - 200 ml
- Olive oil - 1 tablespoon
- Garlic - 1 clove, minced
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Dried oregano - 1/2 teaspoon
Steps
- Preheat the oven to 190°C (375°F).
- Wash the zucchini and slice them lengthwise into thin strips using a mandoline or sharp knife.
- Sprinkle the zucchini slices with salt and let them sit for 10 minutes to draw out moisture. Pat them dry with paper towels.
- In a skillet, heat olive oil over medium heat, add minced garlic, and sauté for 1 minute until fragrant.
- Add the fresh spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat and let cool slightly.
- In a bowl, combine the ricotta cheese, cooked spinach, egg, half of the mozzarella cheese, grated Parmesan, black pepper, and dried oregano. Mix well.
- On a flat surface, take one zucchini slice and place 1-2 tablespoons of the ricotta mixture at one end. Roll it up tightly and place it seam-side down in a baking dish. Repeat with the remaining zucchini slices.
- Once all roll-ups are in the dish, pour the marinara sauce evenly over the top and sprinkle with the remaining mozzarella cheese.
- Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes.
- Remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden.
