Ingredients

  • Zucchini - 2 medium
  • Ricotta cheese - 250 grams
  • Fresh spinach - 100 grams
  • Shredded mozzarella cheese - 100 grams
  • Grated Parmesan cheese - 30 grams
  • Egg - 1 large
  • Marinara sauce - 200 ml
  • Olive oil - 1 tablespoon
  • Garlic - 1 clove, minced
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Dried oregano - 1/2 teaspoon

Steps

  1. Preheat the oven to 190°C (375°F).
  2. Wash the zucchini and slice them lengthwise into thin strips using a mandoline or sharp knife.
  3. Sprinkle the zucchini slices with salt and let them sit for 10 minutes to draw out moisture. Pat them dry with paper towels.
  4. In a skillet, heat olive oil over medium heat, add minced garlic, and sauté for 1 minute until fragrant.
  5. Add the fresh spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat and let cool slightly.
  6. In a bowl, combine the ricotta cheese, cooked spinach, egg, half of the mozzarella cheese, grated Parmesan, black pepper, and dried oregano. Mix well.
  7. On a flat surface, take one zucchini slice and place 1-2 tablespoons of the ricotta mixture at one end. Roll it up tightly and place it seam-side down in a baking dish. Repeat with the remaining zucchini slices.
  8. Once all roll-ups are in the dish, pour the marinara sauce evenly over the top and sprinkle with the remaining mozzarella cheese.
  9. Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes.
  10. Remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden.
