Ingredients

  • Zucchini - 2 medium
  • Ground beef - 250 grams
  • Ricotta cheese - 100 grams
  • Mozzarella cheese (shredded) - 100 grams
  • Parmesan cheese (grated) - 30 grams
  • Egg - 1 large
  • Olive oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Onion - 1 small, diced
  • Canned crushed tomatoes - 200 grams
  • Dried oregano - 1 teaspoon
  • Dried basil - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Slice the zucchini lengthwise into thin strips using a mandoline or a sharp knife, then sprinkle with salt and let sit for 10 minutes to draw out moisture.
  3. In a skillet, heat olive oil over medium heat. Add diced onion and minced garlic, sauté until translucent.
  4. Add ground beef to the skillet, cooking until browned. Drain excess fat if necessary.
  5. Stir in crushed tomatoes, oregano, basil, salt, and pepper. Simmer for 10 minutes to meld flavors.
  6. In a bowl, combine ricotta cheese, egg, and half of the grated Parmesan. Mix until smooth.
  7. Pat the zucchini strips dry with a paper towel to remove excess moisture.
  8. In a baking dish, spread a layer of the meat sauce on the bottom. Layer zucchini strips over the sauce, followed by a layer of the ricotta mixture, and then a sprinkle of mozzarella.
  9. Repeat the layers until all ingredients are used, finishing with a layer of meat sauce and topped with the remaining mozzarella and Parmesan.
  10. Cover with foil and bake for 25 minutes. Remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden.
  11. Let cool for 5 minutes before serving.
