Ingredients
- Zucchini - 2 medium
- Ground beef - 250 grams
- Ricotta cheese - 100 grams
- Mozzarella cheese (shredded) - 100 grams
- Parmesan cheese (grated) - 30 grams
- Egg - 1 large
- Olive oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Onion - 1 small, diced
- Canned crushed tomatoes - 200 grams
- Dried oregano - 1 teaspoon
- Dried basil - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
Steps
- Preheat the oven to 180°C (350°F).
- Slice the zucchini lengthwise into thin strips using a mandoline or a sharp knife, then sprinkle with salt and let sit for 10 minutes to draw out moisture.
- In a skillet, heat olive oil over medium heat. Add diced onion and minced garlic, sauté until translucent.
- Add ground beef to the skillet, cooking until browned. Drain excess fat if necessary.
- Stir in crushed tomatoes, oregano, basil, salt, and pepper. Simmer for 10 minutes to meld flavors.
- In a bowl, combine ricotta cheese, egg, and half of the grated Parmesan. Mix until smooth.
- Pat the zucchini strips dry with a paper towel to remove excess moisture.
- In a baking dish, spread a layer of the meat sauce on the bottom. Layer zucchini strips over the sauce, followed by a layer of the ricotta mixture, and then a sprinkle of mozzarella.
- Repeat the layers until all ingredients are used, finishing with a layer of meat sauce and topped with the remaining mozzarella and Parmesan.
- Cover with foil and bake for 25 minutes. Remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden.
- Let cool for 5 minutes before serving.
