Ingredients
- Zucchini - 400 grams
- Egg - 1 large
- Almond flour - 30 grams
- Cheddar cheese (shredded) - 50 grams
- Green onion (finely chopped) - 2 tablespoons
- Garlic powder - 1/2 teaspoon
- Onion powder - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons
Steps
- Grate the zucchini using a box grater or food processor and place it in a clean kitchen towel. Squeeze out excess moisture from the zucchini to prevent sogginess.
- In a mixing bowl, combine the squeezed zucchini, egg, almond flour, shredded cheddar cheese, chopped green onions, garlic powder, onion powder, salt, and black pepper. Mix until well combined.
- Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Once hot, scoop about 1/4 cup of the zucchini mixture into the skillet and flatten it slightly to form a patty.
- Cook the patty for about 3-4 minutes on each side or until golden brown and crispy. Repeat with the remaining mixture, adding more oil as needed.
- Serve hot, garnished with additional green onions or your favorite low-carb dipping sauce.
