Ingredients

  • Zucchini - 400 grams
  • Egg - 1 large
  • Almond flour - 30 grams
  • Cheddar cheese (shredded) - 50 grams
  • Green onion (finely chopped) - 2 tablespoons
  • Garlic powder - 1/2 teaspoon
  • Onion powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons

Steps

  1. Grate the zucchini using a box grater or food processor and place it in a clean kitchen towel. Squeeze out excess moisture from the zucchini to prevent sogginess.
  2. In a mixing bowl, combine the squeezed zucchini, egg, almond flour, shredded cheddar cheese, chopped green onions, garlic powder, onion powder, salt, and black pepper. Mix until well combined.
  3. Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Once hot, scoop about 1/4 cup of the zucchini mixture into the skillet and flatten it slightly to form a patty.
  4. Cook the patty for about 3-4 minutes on each side or until golden brown and crispy. Repeat with the remaining mixture, adding more oil as needed.
  5. Serve hot, garnished with additional green onions or your favorite low-carb dipping sauce.
