Ingredients

  • Zucchini - 300 grams
  • All-purpose flour - 50 grams
  • Egg - 1 large
  • Grated Parmesan cheese - 30 grams
  • Green onion - 2 stalks, finely chopped
  • Garlic - 1 clove, minced
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons

Steps

  1. Grate the zucchini using a box grater or food processor and place it in a clean kitchen towel. Squeeze out excess moisture until the zucchini is dry.
  2. In a mixing bowl, combine the grated zucchini, flour, egg, Parmesan cheese, green onion, garlic, salt, and black pepper. Mix until well combined.
  3. Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat.
  4. Scoop about 2 tablespoons of the zucchini mixture into the skillet for each fritter, flattening them slightly with a spatula.
  5. Cook the fritters for 3-4 minutes on each side, or until golden brown and crispy. You may need to add more oil for the second batch.
  6. Remove the fritters from the skillet and place them on a paper towel to drain any excess oil.
  7. Serve warm, optionally with a dollop of Greek yogurt or a sprinkle of fresh herbs.
