- Zucchini - 300 grams
- All-purpose flour - 50 grams
- Egg - 1 large
- Grated Parmesan cheese - 30 grams
- Green onion - 2 stalks, finely chopped
- Garlic - 1 clove, minced
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons
Steps
- Grate the zucchini using a box grater or food processor and place it in a clean kitchen towel. Squeeze out excess moisture until the zucchini is dry.
- In a mixing bowl, combine the grated zucchini, flour, egg, Parmesan cheese, green onion, garlic, salt, and black pepper. Mix until well combined.
- Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat.
- Scoop about 2 tablespoons of the zucchini mixture into the skillet for each fritter, flattening them slightly with a spatula.
- Cook the fritters for 3-4 minutes on each side, or until golden brown and crispy. You may need to add more oil for the second batch.
- Remove the fritters from the skillet and place them on a paper towel to drain any excess oil.
